Drawn Butter

drawn butter – Also known as clarified butter, drawn butter is melted butter which has had all of the milk solids removed. In the US butter must contain at least 82 to 84 percent butterfat.  The other ingredients are about 1 to 1 1/2% milk solids, up to 2% salt and 16% water. It is prepared by bringing the butter to a boil over medium heat. When the milk solids have sunk to the bottom, ladle off the top layer. You can also use very fine gauze to strain it.
